The team on Salt Spring harvests, evaporates, sifts, prepares, and packs the salt by hand. Being compelled by quality and an exceptional culinary experience, Salt Spring Island Sea Salt is equally committed to protecting and preserving the environment. They are currently developing new production protocols so the byproduct of their sea salt is fresh water!

    Fleur de sel is created through a fluke of nature. Many elements have to occur at the same time, and it happens only in a few places in the world. We are fortunate that the ocean surrounding Salt spring Island has all the natural elements for a perfectly flaky fleur de sel. 

    Fleur de sel is the purest form of salt you can get as it contains absolutely no gypsum or other impurities from the sea. Unlike a standard sea salt, fleur de sel is a crystal, not a grain. It has a milder, less bitter flavour and a smoother melt-in-your-mouth feeling. It melts slowly on the tongue and provides a delicious crunch as it enhances the flavour of the food. Chefs worldwide consider it to be the crème de la crème of salts.
